I must ask - what if a customer requests something you don't have the ingredients or kitchen implements for?

[Actually, he's curious about Archer's cooking prowess. The guy must be confident if he could afford to not give a menu - even though it might land him in trouble if a troll or an exceedingly snooty customer decided he wanted something very exotic.]
